I imagine you are talking about Headers (Enterprise Headers, Fancy Headers,
.....).
If they do not show the mail address in the header, it is shown in the status
bar when the mouse is over the address.
Also, you can change what type of headers view you like in View|Headers|....

If this is enough, please close this wish as resolved.
