there is no simple switch to do something like this. In fact, KDE
Connect does not require any Plasma libraries, just a few Qt and KDE
Frameworks libraries. If you are really just interested in the daemon
you can fiddle with the CMakeLists.txt files and only include core,
daemon and plugins (or even just some plugins). This might help you get
rid of some dependencies.
