It is just a menu structure of desktop files.
Being as such it works the same as the normal menu which means there are 
two ways of doing it. The old (simpler)way was just a menu structure as 
in applnk
The new way common to Gnome and KDE (see freedesktop.org) is you have a 
folder full of desktop folders that are the heading folders and a folder 
full of application.desktop files that end up in the right places due to 
the naming syntax.
